If you think my Tern has poor IQ and you think this is OK, you need to get a new monitor.....

Critical Focus is on wings and since the subject is not perfectly parallel, head and eye is less sharp.
You can try to apply additional sharpening on the head, but I am not sure it will help.

I like the exposure Collin and the nice view of the top wing, but the IQ is bad, head is OOF and the blacks have no detail in them, the critical focus was on the shoulder and the head was soft, nothing you can do to save it.
When I had Canon I used to shoot with the 600mm + 2X but it was a crap shoot even for me. It would be tough to pull off sharp BIF shots at 1200mm with that 1DX III. You need to be really on top of your game with hand holding, hand-to-eye coordination and your reaction time even then it will struggle and suck.... Canon's DSLR AF just cannot handle it. They just came out with a MILC camera (R5), maybe that one will be able to handle AF at 1200mm better, it's worth a try.
