Does anyone edit photos while travelling?
if so, what do you use? A laptop? If so, which? Or, an iPad? Or other?

I use my mac book air for light processing, if you shoot RAW you won't be able to edit it on an iPad. you need a laptop.

A good laptop will run Photoshop or whatever you use at home. It will be very useful, although you will want to do final tweaking for your best images at home on a better monitor. I have a new 13" MacBook Pro whose screen is in good agreement with my calibrated monitor at home. I also do quite a bit of initial selecting on the laptop, deleting the ones I'm sure I won't want to keep. Lightroom users can easily run it for their new acquisitions and then either sync the catalog when home or just import the new pictures if they store the metadata in .xmp files. The catalog in that case is only needed for the flag ratings and collections, which are not really that vital for short trips.
A pair of inexpensive, small and rugged travel drives will provide extra storage if the laptop had drive isn't big enough and one for a backup, always kept in separate pieces of luggage.
Yes, all but the least expensive model. It matches my high end monitor on my desktop Mac Pro (new NEC) quite nicely.
