Photoshop Proof Setup little confused?

Hey guys I have a question to do with editing I am using two Dell ultra sharp monitors that have pre calibrated SRGB modes. Now my question is when I open a picture in Photoshop and use proof setup and change between windows rgb and monitor rgb the color of the picture changes, what mode should I be on when I am editing?

This is what I have:

edit -> color settings ....
custom
Adobe RGB (1998)
View -> proof colors unchecked.
