I have not used the Canon 75-300mm so I can't offer an opinion.
However, I own and use the Tamron 70-300 VC. The first question people ask seems to be "is it sharp enough for creating images for publication?".
Nov 2011 National Audubon Magazine, Oct-Nov 2011 Popular Photography Magazine, Oct-Nov 2011 Outdoor Photographer Magazine all had half page ads using one of my image created with the Tamron 70-300.
Sharp, fast autofocus and IMO the best vibration reduction system in it's class.
Thanks James.. I got my answer on Tamron... Now I have to find about about Cannon 70-300..
First, I assume you're talking about the new Tamron AF 70-300mm f/4.0-5.6 SP Di VC USD XLD for about $450; not the older cheaper model without VC for < $200.
Now between the Canon and the new Tamron, I don't really like either lens--they're not L-quality, and 300mm is short for birds, even on a crop body--but I don't think there's any question that the Tamron is the better of the two. While I'd suggest seeing if your budget might stretch to a used 400 5.6L, or 100-400L; if it won't I don't think you'll do better than the new Tamron 70-300 for the price.
