I have owned my Acratech GV2 for several years, and bought it because of the weight factor, which makes it very light to carry in the back-country. I believe that it is somewhat over-rated as to the weight it can handle, however I find it can handle the weight of my Canon bodies with lens up to a 70/200mm 2.8 without any difficulty.
I would say no, the Acratech will not handle the weight of the 300/2.8 very well. I find the problem is the fact that the mount-plate is suspended a fair distance from the ball, giving the load (camera & lens) on the mount-plate a lot of leverage to move your set-up, if you do not tighten the ball down tight, and this is with all adjustments with the ball-head having been made correctly.
