Some of the suggestions seem quite useful: http://macperformanceguide.com/OptimizingPhotoshopCS5-Intro.html

It's great to have information for both platforms.

I left CS4 on my computer to use plugins and have CS5 running in 64-bit mode. I read that CS5 can use only 2.1GB RAM in 32-bit mode which is even less than in CS4.

Does CS5 automatically start in 64 bit? How can you tell how it's running?

From Adobe:
How to run Photoshop CS5 in 32-bit and 64-bit modes
To run Photoshop CS5 on Mac OS as a 32-bit application:

Select the Adobe Photoshop CS5 application file, installed by default in the Applications/Adobe Photoshop CS5 folder.
Choose File > Get Info, and select Open in 32 Bit Mode.

Deselect this option to run Photoshop CS5 in 64-bit mode.

If your processor supports 64-bit, CS5 will run in 64-bit mode by default. You can also go to the Activity Monitor to check which applications run in 64-bit.

Depends what Windows version you have Axel

This table lists the amount of RAM available to Photoshop with the different versions of Windows:
<table class="data-bordered" width="100%"><tbody><tr><td class="cellrowborder" valign="top">Photoshop Version</td> <td class="cellrowborder" valign="top">Windows Version</td> <td class="cellrowborder" valign="top">Maximum amount of RAM that Photoshop can use</td> </tr> <tr><td class="cellrowborder" valign="top">32-bit</td> <td class="cellrowborder" valign="top">32-bit</td> <td class="cellrowborder" valign="top">1.7 GB</td> </tr> <tr><td class="cellrowborder" valign="top">32-bit</td> <td class="cellrowborder" valign="top">64-bit</td> <td class="cellrowborder" valign="top">3.2 GB</td> </tr> <tr><td class="cellrowborder" valign="top">64-bit</td> <td class="cellrowborder" valign="top">64-bit</td> <td class="cellrowborder" valign="top">as much RAM as you can fit into your computer</td></tr></tbody></table>

I have Mac OSX (Snow Leopard) running in 64-bit mode, the numbers are a bit different than with Windows. In 32/32 bit it's a bit over 3GB (CS4), with CS5 in 32bit it's 2.1 and in 64bit as much RAM as available.
